[gpio] Change status to D1/V1/S1 and v2.0.0 - #31273

New GPIO features have been added since the last D-stage review. This apparently requires a return to D1 for all templated versions, even those that do not use the new features. The relevant NEW_FEATURES D2 checklist item does not make mention of an exception for unused new features. As the V/S status depends on the D status, they both get changed too.
