Wherever our models use :string, add changeset validation for length or change to text Postgres type #131

By default, the :string type in Ecto will create fields in Postgres that are varchar(255). In places like this and this, for example, user input could be longer than 255 characters. We should either migrate to the text Postgres type or add changeset length validation. See #130 for an example.
